It is that time of year. The sun is shining (most of the time) and the sky is blue (most of the time) and you start to feel really summery!


I have been lucky enough to work with the wonderful people at Alpro again and this time it was to try out their new coconut yogurt and coconut milk. They challenged me to come up with a summery recipe with a twist! So I give you the Pina Colada Ice lollys! You may have seen these on my insta story. 

If you manage to make and eat these without getting the Pina Colada song stuck in your head, you’re better than me!

Ingredients: 

Pineapple chunks – I used the pre chopped fresh ones from the supermarket but tinned would work as would pineapple chopped up. 

Alpro coconut yogurt

You will also need some kind of blender and an ice lolly tray. 

Method: 

  1. drain your pineapple and put it in the blender. I used my nutribullet. Blend until pureed. 
  2. fill your ice lolly trays – mix and match with drizzles of the pineapple puree and yogurt. Get creative!
  3. Place in the freezer over night. 
  4. Enjoy!


These are super simple and super delicious.
